This is a recipe shared by one of you – i asked you guys a while back to fill in the form for my secret project and this is what came out of it! So i decided to call this series YOUR SECRET RECIPE and every week i will be featuring some of your dishes, cooking hacks and more. This week we have Priyanka Patel all the way from London who has shared her recipe of Kaju Paneer Masala Makhani and a few very interesting things in the recipe which are quite different from the way we would normally make this dish.

This recipe of Kaju Paneer Makhani is different in many aspects. Firstly roasted tomatoes have been used in the tomato gravy. And this would lend an inherent smoky flavor to this dish. Second is the use of caramelised onion paste and this would add a very juicy sweet flavor to the dish. Also the use of honey would add a lingering sweetness and a beautiful glaze. Along with the use of saffron, for a rich deep orange color.

A good tangy and sweet gravy along with spiced paneer chunks – this is what makes a great Paneer Makhani Pizza. And the best part is that this is a recipe that can be used on pizza and of course can be enjoyed with rotis or parathas.

Here is the full recipe for Paneer Makhani.

You will need roughly chopped tomatoes, onion, ginger and garlic. Heat oil and add some hing, cumin, black pepper and cinnamon and let them sizzle. Then saute onions till they are translucent. Then add ginger, chilli and garlic and saute until the raw aroma goes. And finally add the chopped tomatoes. Add some salt, turmeric and chilli powder and add some water and let it all cook. This will take about 20-25 minutes and then just put this through a blender to make a creamy gravy. Then heat some butter and saute a bay leaf and add the gravy. And also add some cashew paste, coriander powder, red chilli powder and garam masala and stir everything and let it cook. Then add some roasted kasuri methi and you can also add some fresh homemade cream and sugar. And this makes the makhani gravy ready. You can add some pieces of paneer and enjoy it with rotis or chapatis. But if you want to make makhani pizza, you can add some spiced-sauteed paneer chunks. For that take a pan, heat some oil, add coriander powder, red chilli powder, cumin powder, amchur, black pepper, garam masala and stir them. Then add some kasuri methi and butter and saute everything.  Then add salt, sugar and drop paneer chunks and gently stir fry them. And then enjoy these on any kind of pizza base!

Rajma Chawal is one of the most comforting you can have. There’s something about eating Rajma thats freshly done ‘right-off-the-stove’; it’s purely soul satisfying. And I’m not exaggerating when I say that good Rajma can really uplift my mood. But its true that good Rajma takes time to cook. It tastes best when ingredients are allowed their individual cooking time. At least that’s how my Punjabi best friend taught me to make the real Punjabi style Rajma!

However, the slow cooking method can definitely take a lot of time. And for working days, while you may crave Rajma, it’s not always possible to spend that kind of time in the kitchen. So this recipe is for those kind of days when you need some comfort food with minimal time involved. Also, it used just 1 pressure cooker so there isn’t much to clean too!

The only effort in this recipe is chopping. Everything else just falls in place. And this Rajma has that nice homestyle, slightly tangy feel and it also doesn’t leave you feeling heavy and sleepy. So personally, this recipe really works!

Mumbai Style Bhel Puri Recipe

Bhel Puri is a dish loved by people across ages. It’s probable something that I tried at a very young age and haven’t been able to stop loving ever since.

Almost every Indian city has their own version of Bhel Puri and so does Mumbai. Mumbai style Bhel is filled with the most yummiest chutneys, raw mango or kairi and some peanuts and spicy chana dal.

For me Bhel Puri works as a snack and as a meal. It’s one of those dishes that is so versatile that it can literally be enjoyed any time of the day and also across seasons. A lot of people also like to eat a healthier version of this Bhel – one with pomegranate seeds, sprouts, cucumbers etc. But for me Bhel is something best enjoyed with all the sev and chutneys.

All of us have that one Bhel wala uncle near our house/work/college that satiates our cravings like no other. I remember having Pande ki Bhel, a vendor close to where I stayed in Mumbai. He would come every evening and I fondly remember enjoying this Bhel puri quite often.

Whether it’s farsan or mithai, I definitely feel that all the varieties in Diwali food are special and indeed tasty. I ended up indulging in quite a few varied items and I thought I’d take you through all of these.

My first Diwali feast this year was when a friend hosted my at her house for a sumptuous Diwali meal. This included so many of my favorite items – chaat, biscuits, cookies, banana chips and so much more. The beauty of this meal was that it was all homemade.
